Holiday tradition

I'm celebrating Groundhog Day in my preferred way, with a dinner of sausage spaghetti.  (Sausage?  Ground Hog?  Oh, never mind.)

Sausage-Zucchini Spaghetti
1 lb. Bob Evans Zesty Hot roll sausage
2 small zucchini
1 rib celery, chopped
1 6 oz. can tomato paste
1 14.5 oz. can diced tomatoes
2 T chopped onion
1 t chopped garlic
1/2 t cinnamon
1/2 t sugar
generous pinch of oregano

Brown sausage in large skillet, breaking it up as much as possible.  Drain as much fat from the sausage as you can.  (Bob Evans is lean enough that the fat pretty much stays in the spongy cooked sausage, but if you use cheaper sausage you may be able to pour off a lot.)  Add celery and onion and let it brown.  Slice zucchini thin (this is what food processors are for!), and add sliced zucchini, tomato paste, a little water, garlic, cinnamon, sugar, and oragano.  Start the water for the spaghetti.  Add the diced tomatoes, let the sauce simmer until the spaghetti is cooked, serve, and enjoy.
