That was pretty good...

I got slightly creative in making my dinner tonight, drawing inspiration from the ham that I wanted to finish, the zucchini I saw in the grocery store when I went shopping on the way home from work, and the random thought out of the blue that pineapple would be a good addition.

2 medium zucchini, thin sliced
~4 oz cooked ham, diced
1 8 oz. can pineapple tidbits
2 c. instant rice
1 can condensed cream of celery soup
~1 t. black pepper
~1 T. lemon juice
~2 T. chopped onion
generous pinch of sage

Start boiling water for the rice in a separate saucepan. Start sauteing zucchini, onion, pepper, and sage in large skillet. Chop ham into tiny bits and add to skillet. Add rice to water, cover, and turn off heat (as soon as the water starts boiling); set timer for 5 minutes. Drain pineapple, reserving liquid; add pineapple to skillet; stir. Add a little pineapple juice to the skillet as things seem to be getting a little dry. When timer rings and zucchini seems to be done, add the soup, the rice, and the lemon juice to the skillet, and stir until it's evenly mixed.
